Parmigiano-Reggiano ~ King of Cheese
Parmigiano-Reggiano (PDO) a cow’s milk cheese is known as the ‘king of cheese’ and guaranteed for its distinctive features and its link with the area of origin, by a system of EU rules designed to protect consumers and producers.
The producers of Parmigiano in and around Modena, Bologna, and Mantua were severely affected by the 6.o magnitude earthquake in May 2012, when 300,000 wheels of Parmigiano Reggiano rolled off the shelves. The broken rind or cracked interior of these wheels can’t age any further. Some were rescued and sent to refrigerated warehouses awaiting their fate.
